650-800 grams of pork secret (depending on the amount you want to serve)
16 snow peas
Teriyaki sauce (as needed to marinate the meat)
fresh cilantro
freshly ground black pepper
Maldon salt
Elaboration
Remove any excess fat from the pork tenderloin, place it in a container where everything can be spread out and spread it well with the teriyaki sauce. Cover the container with cling film and leave it in the refrigerator for about an hour, so that it can acquire its flavour.
Wash the snow peas well, cut off the ends, removing the string from the sides, dry them and put a non-stick frying pan on the heat to sauté them. Put a little extra virgin olive oil in the pan and when it is hot, add the snow peas. Sauté for a few minutes, leaving them crispy, add salt to taste and set aside. Grease the grill with a little extra virgin olive oil and heat it up. When it has reached the required temperature, add the pork tenderloin soaked in the teriyaki sauce, but drained. Cook the meat on both sides to taste. We think it should be pink inside. Before serving, brush the secret with a little teriyaki sauce.
Cut the pork tenderloin into portions and arrange them on plates, garnish with the sautéed snow peas, a few cilantro leaves and finish with a little Maldon salt. Enjoy!
